Casamiento

For the second Friday of Lent, we know that beans and rice are a familiar dish in many cultures, different beans, some with veggies.

In Honduras, this dish is called casamiento which means marriage. The name marriage is said to be because the rice and beans start out a different color, represent the bride and groom, and once done, all are the same color, now married.

In different parts of Honduras, they use different beans and may add coconut milk as well. In the area where Dr. William and Mrs. Susan Stavanoha serve at NPH Honduras, they use the small red beans, so this is what I am choosing to make. Bill said that on special occasions avocado may be served alongside.

I used the recipe from this website and substituted brown rice for the white rice because that was all I had on hand. Following the recipe for the instapot red beans also created the bean broth that was so good.

We will have this on Friday, and remember the children at NPH Honduras that Bill and Susan care for, in our prayers.

· 1 tbsp vegetable oil

· ½ cup yellow onion diced

· ½ cup green bell pepper(s) diced

· 1 ½ cups bean broth strained with a fine mesh strainer

· ¼ tsp kosher salt or to taste

· 2 cups long-grain white rice cooked (I used brown rice)

· 3 cups red beans cooked

Sauté Vegetables: In a large skillet over medium-high heat, heat the oil and cook the onion and green pepper, tossing occasionally, until the onion is lightly golden around the edges. About 4 to 5 minutes.

Add Rice and Beans: Slowly add the broth and salt to the skillet and mix into the onion and pepper. Add the cooked rice to the skillet and stir into the bean broth. Next, add the cooked red beans to the skillet and gently stir into the rice and bean broth until all the ingredients are fully mixed.

Simmer Rice and Beans: Bring to a boil, then reduce the heat to medium-low and simmer uncovered and undisturbed for 10 to 12 minutes or until the broth has been reduced and fully absorbed.

Gently toss the beans and rice then transfer to a serving bowl and enjoy!
