Matakoe with Beans and Greens

Mashed Matoke

Cooked and mashed matoke is Uganda’s official food dish. In the US Matoke can be made with plantains, rather than the type of cooking banana used in Uganda. It comes out with a very similar consistency, but maybe somewhat less flavorful – but is wonderful paired with beans and greens.
Step one – slice the skin on the plantains down the length in several places, and peal.
Step two – slice and peal plantains into pieces
Step three – boil till soft
Step four – mash and enjoy!

Uganda Beans

I cheated a bit and did not make the beans from scratch – but used a can of pinto beans cooked with the seasonings and they came out very well.

Prepare Pinto beans or use 1 can of pinto or chili beans
Add to frying pan
1 tablespoon oil
1 red pepper diced – seeds removed (some recipes call for the scotch bonnet pepper)
1 onion diced
2 cloves garlic diced
1 tomato diced
Cook till all are tender
Add beans
Ginger – fresh would probably be better, but a teaspoon of dried worked great
Salt – to taste
Cook till all combined and enjoy.

Uganda Greens

(similar to Njama Njama in Cameroon – there it is made with huckleberry leaves and cooked longer, but yummy)

I have to admit this is one of my favorite dishes from my visits to Uganda. It is one that is slightly different it seemed from each cook, and like the beans, I found also found several recipes and even YouTube videos that were familiar. I certainly cut some corners, but was really happy with how this turned out, so good, will be hard to share this dish!

3 cups diced kale or collard greens washed, diced, and set aside
add to heavy pan
1 tablespoon olive oil
1 chopped onion
1 diced tomato
2 cloves garlic
½ diced red pepper
cook till tender
add greens stir occasionally
add ½ cup water
reduce heat, cover and cook 2 – 5 minutes
check to be sure this is not overcooking, but when the greens tender it is done
add handful of diced cilantro
salt to taste
… then try to not eat it all!
